Peanut Butter Cookies

Ingredients

dry:
  • 1.5 c AP flour
  • 3/4 tsp baking powder
  • 1/4 tsp kosher salt
  • wet:
  • 1/2 c butter
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 c peanut butter
  • other:
  • flakey salt
  • Instructions:

  • Preheat the oven to 400 degree
  • Line a half sheet with parchment paper
  • Mix dry ingredients together in one bowl
  • Mix wet ingredients together in the bowl of a stand mixer or one that can accommodate a hand mixer
  • Add the dry to the wet in 4-5 small batches, letting the wet thoroughly absord the dry before adding another batch of the dry.
  • Divide the dough into 8-9 balls and place on the parchment lined baking sheet
  • Using a fork, press down on the top of the cookies slightly, then rotate 90 degrees, creating a crosshatch
  • If desired, sprinkle with flakey salt
  • Bake for 15-18 minutes
