Peanut Butter Cookies

Ingredients
dry:
1.5 c AP flour
3/4 tsp baking powder
1/4 tsp kosher salt
wet:
1/2 c butter
1/2 c sugar
1/2 c brown sugar
1 egg
1/2 tsp vanilla extract
1/2 c peanut butter
other:
flakey salt
Instructions:
Preheat the oven to 400 degree
Line a half sheet with parchment paper
Mix dry ingredients together in one bowl
Mix wet ingredients together in the bowl of a stand mixer or one that can accommodate a hand mixer
- Adding the wet ingredients together in the order listed seems to provide the best consistency
Add the dry to the wet in 4-5 small batches, letting the wet thoroughly absord the dry before adding another batch of the dry.
Divide the dough into 8-9 balls and place on the parchment lined baking sheet
Using a fork, press down on the top of the cookies slightly, then rotate 90 degrees, creating a crosshatch
If desired, sprinkle with flakey salt
Bake for 15-18 minutes
- The cookies might seem underdone when first taken out of the oven, but will firm up as they cool, but still stay tender
